Zilavka
Zilavka – An authentic Balkan grape
Zilavka is a traditional white grape variety from the Balkans, with origins most closely associated with Herzegovina. Thanks to the warm climate, abundant sunshine and dry soils of this region, Zilavka has developed into a grape with a character all its own. Today, besides Herzegovina, it is also planted in parts of North Macedonia, especially in warm wine areas such as Tikveš, Veles, Strumica and Ovče Pole.
Characteristics of the grape
- Skin & colour: The grape is medium-sized, round and has a thin, green-yellow skin, sometimes with small rust-coloured spots.
- Ripening: Zilavka ripens relatively late, usually in early October, and performs best on dry, chalky, well-drained soils.
- Sun lover: Strong sun exposure gives the grape a fine balance between ripeness, freshness and aromatic intensity.
Flavour profile of Zilavka wines
Zilavka wines are known for their bright yellow to pale green colour, fresh aromas with notes of white fruit and citrus and sometimes a spicy nuance, a full, round body despite their fresh style, and a harmonious, soft finish. Although many Zilavka wines are made dry, there are also versions with light oak ageing or a richer profile.
Food pairing
Zilavka pairs well with seafood and shellfish, light pasta dishes, white meat, soft and semi-hard cheeses, vegetarian starters and fresh desserts. Thanks to its fresh acidity and soft structure, it is an excellent wine for both light meals and warm summer days.
